What is Freeze Drying Candy?

Freeze drying candy is a preservation method that involves freezing the candy at low temperatures and then removing moisture under vacuum conditions. This process helps maintain the candy's original taste, color, and nutritional value while creating a unique and crunchy texture. When candy is freeze-dried, it becomes lightweight and easy to store, making it perfect for snacking or long-term storage.

How Does the Freeze Drying Process Work?

The freeze drying process consists of three primary phases:

1. Freezing: The candy is first frozen to a temperature below -40°F (-40°C). This helps solidify the water content in the candy.
2. Primary Drying: The frozen candy is placed in a vacuum chamber, where the pressure is lowered. This allows the ice to sublimate, turning directly from solid to vapor without passing through the liquid phase.
3. Secondary Drying: In this final phase, any remaining moisture is removed, ensuring that the candy is completely dry and ready for storage.
